I’m a Wellness Dietitian and Culinary Nutrition expert with over a decade of experience working passionately towards improving the health of others. I have diverse experience in the fields of integrative nutrition, health education, clinical counseling, clinical research, and community wellness.
I’m also a seasoned culinary educator, food writer, and recipe developer and have a deep love of cooking, eating, and advocating for local, seasonal, organic, and sustainably produced foods. My mission is to help others translate complex nutrition recommendations into simple, actionable steps using health-supportive foods prepared in ways that taste delicious.
I began my education at Northern Arizona University, where I obtained a Bachelor of Science in Health Education. Later, I received a Master of Science in Nutrition from Bastyr University in Kenmore, WA. In 2004, I returned to my hometown, Kansas City, to complete my Certificate in Dietetics from the University of Kansas Medical Center.
As a lifelong learner, I’ve continued my professional development with ongoing continuing education from organizations such as the Integrative and Functional Nutrition Academy, the Institute for Functional Medicine, and Field to Plate. I’m an active member of the Academy of Nutrition and Dietetics, Dietitians in Integrative and Functional Medicine, Integrative and Functional Nutrition Academy, Food and Culinary Professionals, the Greater Kansas City Food Policy Coalition, and Cultivate Kansas City.
I currently work as a nutrition consultant for the University of Kansas Hospital, providing nutrition coaching and education for patients with chronic illness. I’m also an Assistant Nutrition Professor at Johnson County Community College, where I teach an intro nutrition course called Nutrition for Life.
I’ve been featured as a nutrition and cooking expert on Kansas City’s Fox 4 News and I’m frequently interviewed by the media about nutrition and wellness. I’ve written for Tastebud Magazine, Edible Kansas City, Good Health Kansas City, and Greenability Magazine. In 2008, I contributed nutrition content for Stir Well to Heaven: The Eden Alley Café Cookbook by restaurant owner/chef Sandi Corder-Clootz.
I was diagnosed with Hashimoto’s thyroiditis in 2008, chronic Lyme disease in 2012, and mycotoxin illness in 2014. As a result, I’ve struggled with chronic pain and fatigue and other symptoms of inflammation. Although I’ve had my challenges and limitations from these chronic illnesses, I’ve used a combination of conventional as well as complementary care (acupuncture, massage, yoga) to deal with situation head-on, in an empowered way. Therapeutic nutrition has been one of my greatest allies on my healing path.
I’m grateful for the opportunity to join Healthful Elements and am beyond thrilled for the opportunity to work with my dear friend and respected colleague, Jill, on our first cookbook, The Essential Thyroid Cookbook: Over 100 Nourishing Recipes for Eating Well with Hypothyroidism and Hashimoto’s.
