Easy Whole Food Popsicles!

Watermelon Blueberry Fruit Pops

Ingredients:

3 cups small watermelon chunks (without seeds)
1 tablespoon raw honey
1 cup fresh or frozen blueberries

Preparation:

  1. Puree the watermelon chunks and honey in a blender until smooth.
  2. Fill 6 popsicle molds evenly with about 10-12 whole blueberries. Pour watermelon purée over blueberries until each mold is nearly full. Arrange sticks in molds and freeze until solid, 6 hours or overnight.
  3. When ready to eat, run mold under warm water and the ice pop will slide out easily.  

Cherry Apricot Yogurt Pops

Ingredients: 

1½ cups unsweetened coconut milk yogurt
2-3 tablespoons raw honey
1 teaspoon of vanilla extract
1½ cups cherries, pitted
1-2 small apricots, chopped

Preparation:

  1. Mix the yogurt, honey, and vanilla extract until well blended.
  2. Puree cherries in a blender until smooth.
  3. Pour a layer of the yogurt mixture into the ice pop molds. Add a few pieces of apricots and then pour a layer of pureed cherries. Finish with another layer of the yogurt mixture. Arrange the sticks in molds and freeze at least 6 hours.
  4. When ready to eat, run mold under warm water and the ice pop will slide out easily.
